Fine Dining Server/Sommelier

Job Description

The fine dining server/sommelier is responsible for making food and beverage recommendations, wine pairing suggestions, taking orders, and serving food and beverages to customers of the Stirling Dining Room & Lounge. They ensure customers’ needs have been met and handle any issues that may arise during their dining experience.

REQUIREMENTS

The ideal candidate will hold a WSET Level 3 certificate, a ProServe certificate and have at least 2-years experience as a fine dining server with extensive wine knowledge.

The fine dining server/sommelier must be able to work on their feet for long periods of time and be able to carry up to 20kg. Excellent communication and customer service skills, along with a pleasant manner is essential when dealing with customers’ issues or concerns.

The successful candidate must be willing and able to work a mix of day, evening, and weekend shifts, depending upon the schedule.

DUTIES

The duties of this position include, but are not limited to:

  • Learn the menu offerings thoroughly, including ingredients, preparation techniques, and available substitutions, allergies.
  • Make menu and beverage recommendations, take orders, and serve food and beverages to customers.
  • Work with Chef to create wine pairings.
  • Follow up with customers to ensure all their needs have been met during their dining experience.
  • Manage customers’ concerns and issues in a respectful and timely manner.
  • Ensure all food handling safety standards are met.
  • Coordinate with the banquets team for all wine transfers.
  • Accept payments and provide appropriate change where required.
  • Ensure end of day cash-outs are accurate.
  • Order wines to maintain par levels and ensure stocked cellar.
  • Conduct monthly wine inventory.
  • Maintain service areas in a clean and orderly condition (cleaning, restocking, counting inventory, and removing garbage).
