The fine dining server/sommelier is responsible for making food and beverage recommendations, wine pairing suggestions, taking orders, and serving food and beverages to customers of the Stirling Dining Room & Lounge. They ensure customers’ needs have been met and handle any issues that may arise during their dining experience.
REQUIREMENTS
The ideal candidate will hold a WSET Level 3 certificate, a ProServe certificate and have at least 2-years experience as a fine dining server with extensive wine knowledge.
The fine dining server/sommelier must be able to work on their feet for long periods of time and be able to carry up to 20kg. Excellent communication and customer service skills, along with a pleasant manner is essential when dealing with customers’ issues or concerns.
The successful candidate must be willing and able to work a mix of day, evening, and weekend shifts, depending upon the schedule.
DUTIES
The duties of this position include, but are not limited to:
Learn the menu offerings thoroughly, including ingredients, preparation techniques, and available substitutions, allergies.
Make menu and beverage recommendations, take orders, and serve food and beverages to customers.
Work with Chef to create wine pairings.
Follow up with customers to ensure all their needs have been met during their dining experience.
Manage customers’ concerns and issues in a respectful and timely manner.
Ensure all food handling safety standards are met.
Coordinate with the banquets team for all wine transfers.
Accept payments and provide appropriate change where required.
Ensure end of day cash-outs are accurate.
Order wines to maintain par levels and ensure stocked cellar.
Conduct monthly wine inventory.
Maintain service areas in a clean and orderly condition (cleaning, restocking, counting inventory, and removing garbage).
